Preparation of the low GI dark chocolate and avocado tartelettes:

1. Crust preparation:

In a bowl, mix all the ingredients until you get a homogeneous dough. If the dough is too dry, feel free to add a little water.

On a floured work surface, roll out the dough to about 1 to 2 millimeters thick. Cut strips to make the outlines of your tartlet circles. Then divide the dough into circles to form the bottoms of your tartelettes. Place the tart bottoms in a preheated oven at 180°C for about 15 minutes of baking. Remove the circles and continue baking for another 5 minutes.

2. Filling preparation:

Meanwhile, prepare the filling. In a bowl, mash the avocados with a fork until you get a smooth puree without lumps.

In a saucepan, melt the dark chocolate over low heat. Once melted, remove the saucepan from the heat and add the avocado puree, maple syrup, vanilla extract, and a pinch of salt. Mix well until all the ingredients are perfectly incorporated.

3. Assembly of the tartelettes:

Pour the chocolate and avocado mixture onto the tart bottoms. Spread evenly with a spatula.

Tasting:

Once the tartelettes are filled, place them back in the refrigerator for at least 2 hours, until the filling is set.

When serving, decorate them according to your desire: a few hazelnut shards, chocolate shavings, or a touch of light whipped cream.

Ingredients
