Just because we have dietary constraints doesn’t mean we can’t indulge. It’s with this belief that I present to you my recipe for rice flour crepes, specially designed to satisfy your taste buds while respecting the requirements of a diet suitable for diabetics and with a low glycemic index.
I love when recipes are simple, with few ingredients and effective (when I can ^). I’ve tried various versions, adding yeast here and there, but none really convinced me. That’s why I’m sharing my ultimate, tasty, and light recipe today.
And speaking of yeast, I’ve read that some people are against it in certain diets. So know that you can replace it by combining 1 teaspoon of baking soda with 1 tablespoon of acidic agent (apple cider vinegar, plain yogurt, or lemon juice).
Here are the ingredients you’ll need to succeed with your low GI crepes:
- 100g rice flour (or barley flour)
- 2 eggs
- 200ml unsweetened almond milk or coconut milk
- 1 tablespoon vegetable oil (or coconut oil)
- 1 pinch of salt
The role of each ingredient:
- Rice flour (or barley flour): Provides the light and gluten-free base.
- Eggs: Natural binders and a source of protein.
- Almond milk or coconut milk: Essential liquid for the consistency of the batter.
- Vegetable oil (or coconut oil): Adds a touch of healthy fat for a moist texture.
- Salt: Enhances flavors and balances aromas.

How to prepare your low GI rice flour crepes?
- Mix the flour with the salt in a bowl.
- In another bowl, beat the eggs, add the almond milk (or coconut) and the vegetable oil (or coconut).
- Pour the liquid mixture into the dry mixture and stir until smooth.
- Let the batter rest for about 10 to 15 minutes.
- Cook the crepes as usual.
With this recipe, I make 10 delicious crepes. I preferred the “neutral” taste of almond milk. Even though I love coconut, all-coconut pancakes were too much for me ^^!
My tips and tricks for successful low GI crepes:
- Add a hint of vanilla for a natural sweet note.
- Experiment with different types of milk to explore new flavors.
- If the batter is too thick, adjust with a little more liquid.

Crêpes à la farine de riz IG bas
Recette de crêpes à la farine de riz, adaptée aux diabétiques, à
l'indice glycémique bas, et facile à préparer. Régalez-vous sans

Ingredients
- 100 g de farine de riz (ou farine d'orge mondé)
- 2 œufs
- 200 ml de lait d'amande ou de lait de coco non sucré
- 1 cuillère à soupe d'huile végétale (ou d'huile de coco)
- 1 pincée de sel
Instructions
- Mélangez la farine avec le sel dans un bol.
- Dans un autre bol, battez les œufs, ajoutez le lait d'amande (ou de coco) et l'huile végétale (ou de coco).
- Versez le mélange liquide dans le mélange sec et remuez jusqu'à obtenir une pâte lisse.
- Laissez reposer la pâte pendant environ 10 à 15 minutes.
- Faites cuire les crêpes comme à votre habitude.
Notes
Avec cette recette, je réalise 10 crêpes délicieuses. J'ai préféré le goût "neutre" du lait d'amande. Même si j'aime la coco, les crêpes tout coco était de trop pour moi ^^ !
